Directions

  1. Roast the Makhana:
    • Heat 1 tablespoon of ghee or oil in a pan over medium heat.
    • Add the makhana and roast for 5 to 6 minutes until they are crisp. Remove from the pan and set aside.
  2. Prepare the Spice Mix:
    • In the same pan, add another tablespoon of ghee.
    • Stir in the red chili powder, turmeric powder, roasted cumin powder, a pinch of hing, and a little salt. Mix well to combine the spices.
  3. Coat the Makhana:
    • Return the roasted makhana to the pan with the spice mix. Toss well to ensure the makhana are evenly coated with the spices. Remove from heat and set aside.
  4. Assemble the Chaat:
    • In a large mixing bowl, combine the chopped onions, tomatoes, and roasted peanuts.
    • Add salt, black pepper powder, and red chili powder to the mixture.
    • Add the spiced makhana to the bowl.
    • Drizzle lemon juice over the mixture and toss everything together until well mixed.
  5. Garnish and Serve:
    • Sprinkle chopped coriander over the chaat before serving.
