Directions

  1. Cook the Pasta:
    • In a large pan, bring water to a boil. Add the pasta, oil, and 1 teaspoon of salt.
    • Let it boil for about 2 minutes, or until the pasta is al dente.
    • Drain the pasta using a strainer and set it aside.
  2. Prepare the Sauce:
    • In another pan, melt butter over medium heat.
    • Add the chopped garlic and sauté until fragrant.
    • If using, add the green chilies and onion. Sauté for about a minute until the onions are translucent.
    • Add the chopped tomatoes, stir well, and cook for another minute.
    • Sprinkle in the remaining 1 teaspoon of salt, cover with a lid, and let it cook for 2 minutes.
  3. Combine and Season:
    • Stir in the tomato sauce and mix well.
    • Add the boiled pasta to the sauce.
    • Season with chili flakes and oregano, and mix thoroughly to combine all the ingredients.
  4. Add Cheese and Finish:
    • Sprinkle the desired amount of cheese over the pasta, and cook for an additional minute to allow the cheese to melt.
    • Stir well to ensure the cheese is evenly distributed.
  5. Serve:
    • Serve the pasta hot, garnished with additional cheese or herbs if desired.
