Directions

  1. Place a large pot on the stove and add the milk. Bring it to a boil.
  2. Meanwhile, wash the rice thoroughly 2 to 3 times under running water.
  3. In a small bowl, take 1 tablespoon of water and soak the kesar strands to release their color and flavor.
  4. Once the milk has reached a boil, add the washed rice. Reduce the heat to medium and let it cook for about 15 to 20 minutes, stirring occasionally, until the mixture starts to thicken.
  5. While the rice is cooking, chop the makhana into smaller pieces.
  6. Add the chopped makhana to the simmering milk and rice mixture. Stir well to incorporate.
  7. Mix in the soaked kesar, ensuring it is evenly distributed throughout the kheer.
  8. Add the sugar and chopped dry fruits to the pot. Mix thoroughly and continue to cook for an additional 5 minutes.
  9. Once the kheer is creamy and the rice is fully cooked, remove from heat.
  10. Serve the kheer hot or chilled. Garnish with additional chopped dry fruits before serving for an extra touch of richness.

You can also add Meva instead of sugar for sweetness.
